Aloo Bonda


Time taken : 30 mins


Ingredients


For the stuffing


Boiled and Mashed Potatoes    : 4  
Cashewnuts                                : 10 broken pieces
Ajwain                                         : To taste 
Baking soda                               : 2 tablespoon
Chilly Powder                             : 1 tablespoon
Chopped Coriander                   :1 bunch
Finely chopped ginger               :1 tablespoon
Finely chopped green chillies    : 4 nos.
Cumin seeds                              :1 tablespoon
Curry leaves                               : 5 leaves
Mustard                                      : 1/4 tablespoon
Finely chopped onion                 : 1/2 cup
Salt                                             : 1 tablespoon
Turmeric powder                        :1/4 tablespoon.
Oil to fry



Method


1.Heat the pan.
2.Add oil to it
3,Add mustard seeds,cumin seeds, turmeric powder,chopped onions,chopped green chillies,chopped coriander leaves,chopped ginger,chopped curry leaves, hing, cashew salt,mashed potatoes,.add lemon juice.
4.Mix well.



For preparing the dough


1.Besan               :1cup
2.Rice flour           :3tspn,
3.Ajwain                 :little
4.Baking Soda      :2 teaspoon
5.Chilly Powder      :1/2 tablespoon
6.Salt  .

Method

1.Add water to Besan,rice flour along with Ajwain,Baking soda,chilli powder and salt,and mix well..
2.Make sure the batter is not sticky.


Making of aloo bonda

1. Make balls of the stuffing.
2. Dip this in the above prepared batter.
3. Fry in oil till golden brown.
4. Serve them with sauce or green chutney.

Piping hot and spicy Samosas

The most relished snack for the evening time since ages has been The Samosa. Here is a look at how to make the best of Samosas at a very short span of time.




Time taken : 25 mins


Ingredients


For the outer cover


Maida Flour                : 3 cups
Oil                                : 1 tablespoon
Ajwain(Omam)           : 1/4 tablespoon
Salt to taste


For the stuffing


Boiled Potatoes                    : 2 large-sized
Ginger-Garlic Paste              :  1 tablespoon
Turmeric Powder                  : 1/4 tablespoon
Green Chillies                       : 4 (finely chopped)
Jeera Powder                       : 1/4 tablespoon
Coriander Powder                : 1/4 tablespoon
Chilli Powder                        : 1/2 tablespoon
Chat Masala                         : 1/4 tablespoon
Cashew                                 : 10 broken pieces
Jeera seeds                          : 1/2 tablespoon
Mustard seeds                     : 1/2 tablespoon
Lemon juice                          : 1/2 tablespoon
Coriander Leaves                : 1 tablespoon(finely chopped)
Oil                                          : 2 tablespoons
Salt to taste


Method:


Making the cover:


1. Knead the maida flour along with salt,ajwain and 1 tablespoon of oil and keep it aside for about 15 mins.

Preparation of the stuffing:

1. Fry mustard seeds,jeera seeds,ginger-garlic paste,turmeric powder,green chillies,jeera powder,coriander powder, chilli powder, chat masala,salt and cashew nuts in 2 tablespoons of oil in a pan for 5 mins on medium flame.
2. Add the 2 mashed potatoes to the pan and continue frying for another 2-3 mins on medium flame.
3. Now add the coriander leaves before switching off the pan.
4. Remove from the flame and add the lemon extracts to the above obtained mix.

Making the samosas:

1.Make small balls of the already kneaded dough.
2.Roll them into medium sized chapatis.
3.Cut each of the chapatis into 2 equal halves.
4.Apply water along the edges of each of the half and fold it into a cone.
5.Fill the masala into the cone and then fold the third side.
6.Heat 1/2 cup of oil and deep fry the samosas in them till they become golden brown.
7.Serve piping hot samosas with tomato ketchup and green chutney.
